The 29-year-old underwent shoulder surgery this year and missed the Rugby Championship and end-of-year tour to the UK.
Du Toit was initially set to join Munster from the Stormers, but the move was vetoed by the Irish Rugby Football Union.
Springbok teammate Willie le Roux also plays for Verblitz, as do flyhalf Lionel Cronje and lock Louis Conradie.
Verblitz will be playing in the first division of the newly revised Japan Rugby League One, which gets under way on Friday, 7 January.
